Almond Butter Chicken Satay

Recommended Wine Pairing : Valo Cellars Reserve Chardonnay
4 chicken breasts de-boned
1 chopped onion
chopped fresh cilantro
1 cup almond butter
1/3 cup coconut milk
1-3 TBSP sriracha
2 TBSP lime juice
2 TBSP soy sauce
2 TBSP minced pickled or fresh ginger (optional – don’t make a special trip to the store for this)
1 TBSP rice wine vinegar or white wine vinegar
To make the sauce:
Mix the almond butter and coconut milk together in a bowl. Then add the sriracha, lime juice, soy sauce, ginger, and vinegar and stir together. The recipe is very much based on personal tastes so adjust the levels of sriracha (for heat), soy (for saltiness), and lime juice / ginger (for acid & sweetness) to suit your personal tastes. If the sauce is a little too thick, add a bit more coconut milk. If it’s too thin, add a bit more almond butter. It should be a creamy dipping consistency.
To make the chicken satay:
Sauté the onion in some butter until tender and fragrant. Set aside.
Cut up the chicken breast into strips. You can grill the chicken strips and baste them with some of the sauce or do what we did and just cook the chicken in a bit of butter in a frying pan. Once the chicken is cooked, drizzle a healthy portion of sauce over each piece, sprinkle on the sautéed onions, and garnish with the cilantro. Serve with the remainder of the sauce for extra dipping. You could also serve this over rice for a heartier version of this meal.
