Goat Cheese & Mushroom Duxelles Grilled Cheese Sandwich

Featured Costco Ingredient : Goat Cheese
Recommended Wine Pairing : Valo Cellars Merlot


INGREDIENTS

Sourdough loaf (we recommend using On The Rise or Co-op bread)
Log of goat cheese (we are showcasing Costco goat cheese in this recipe but also recommend Amaltheia if you’re working hard to support local right now)
Butter
2 TBSP minced onion
2 TBSP minced garlic
2 Containers fresh mushrooms
1 TBSP chopped fresh thyme
1 TBSP chopped fresh parsley
1 TBSP chopped fresh rosemary
1-2 TBSP sherry wine vinegar (you can substitute any un-drank red wine for this—even if it’s been left out too long)
Salt and pepper

DIRECTIONS

To make the mushroom duxelles:

Melt the butter in a pan. Sauté the onions and minced garlic until tender then add the mushrooms (whole or loosely chopped is fine) and cook until soft. Cook in the herbs and add the sherry wine vinegar cooking down for a few minutes. Remove from heat and let cool slightly. Add to a food processor and blend until it becomes a paste. Add salt and pepper to taste.

To assemble the grilled cheese:

On one slice of bread, generously layer goat cheese. On the other cover with a thick layer of the mushroom duxelles. Put the two pieces together and grill the sandwich as you would normally grill a grilled cheese. You can use the traditional butter method on the outside of the bread. We also found that grilling in olive oil gave the bread an extra crunch that we loved.

Pair with a glass of wine and enjoy!
