Sweet Potato Breakfast (Dinner) Hash
Featured Costco Ingredient : Sweet Potatoes
Recommended Wine Pairing : Valo Cellars Pinot Noir
1/2 package of bacon cut into small pieces
2 chopped sweet potatoes
1/2 onion, chopped finely
1/2 red pepper, chopped finely
2 garlic cloves, minced
shaved parmesan (optional)
hot sauce (optional)
To make the hash :
Crisp up the bacon. Remove from the grease (leaving the grease in the pan) and set aside. Pour half the grease into a bowl or cup and sauté the onion, red pepper, and garlic in the remaining grease until tender. Remove from pan and set aside. Add the saved grease and cook the sweet potatoes in it until soft. Once the potatoes are cooked, mix the onion and red pepper mixture and the bacon into the pan. Add salt and pepper to taste. Sprinkle with the shaved parmesan and allow the cheese to start melting onto the hash.
To add eggs to the hash :
Fry the eggs in a separate frying pan to your taste. We like over easy. When the eggs are cooked, slide them out of the pan over top of the hash. Garnish with any hot sauce of your choice and serve.
Pair with our Valo Cellars Pinot Noir if you skipped the hot sauce. The bacon and sweet potatoes will pair exceptionally well with it, but adding a spicy component can flatten out red wines.
